These 3-ingredient pistachio cookies are a rich and wholesome treat, naturally sweetened with maple syrup for a hint of caramelized sweetness. Incredibly simple to make, they're a perfect snack that's both satisfying and nourishing.   1. Preheat the oven to 350°F (180°C) and line a baking sheet with lightly oiled parchment paper.
  2. Blend pistachios in a high-speed blender until finely ground.(3 minutes)
  3. In a bowl, mix the ground pistachios, maple syrup, and coconut oil into a sticky dough.(3 minutes)
  4. With oiled hands, roll tablespoon-sized balls of dough, flatten slightly, and place on the baking sheet. Top with crushed pistachios.(5 minutes)
