  • 1/2 cup of peanut butter
  • 1/2 cup of honey
  • 1 pint of ice cream (or more for thicker sandwiches)

Directions

The Amaranth Pop Ice Cream Sandwich offers a nutritious twist on a classic treat, combining the wholesome benefits of fiber- and protein-rich amaranth and peanuts, naturally sweetened with honey. These nourishing ingredients create a delightful cushion for your favorite ice cream, making each bite a balanced indulgence.

  1. In a bowl, mix together the honey and peanut butter until creamy.(3 minutes)
  2. Add in the amaranth pop and mix until everything is well coated.(3 minutes)
  3. Spread the mixture in a parchment paper lined baking sheet, creating a rectangle. Gently press it down. Place in the freezer for about 30 minutes.(30 minutes)
  4. Take the mixture out of the freezer, cut it in half crosswise.(2 minutes)
  5. Evenly spread the ice cream on one half, and place the other half on top. Press it gently and freeze it for 2-3 hours.(3 hours)
