Apple Cinnamon Bagels with Amaranth Flour

Ingredients

  • 1/4 cup of HerbaZest Amaranth Flour
  • 2 cups of all-purpose flour (+ for rolling out dough)
  • 3 teaspoons of ground cinnamon (divided)
  • 5 tablespoons of brown sugar (divided)
  • 4 teaspoons of baking powder
  • 1 3/4 cups of greek yogurt
  • 2 tablespoons of butter
  • 1 cup of apples (peeled & finely diced)

Directions

These homemade bagels are the perfect treat for cozy fall mornings. Enriched with amaranth, they offer a hearty, nutrient-rich start to your day, with the brown sugar adding a subtle sweetness that complements the warmth of the cinnamon and the freshness of the apples. The Greek yogurt keeps the bagels soft and moist, while the amaranth flour adds a satisfying, wholesome texture.

  1. To a bowl, add the flours, baking powder, 2 teaspoons of ground cinnamon, and 3 tablespoons of brown sugar. Mix well.(2 minutes)
  2. Stir in the Greek yogurt and diced apples until the dough becomes crumbly.(3 minutes)
  3. On a lightly floured surface, knead the dough until it's no longer sticky, adding more flour as needed.(10 minutes)
  4. Roll the dough into a thick log, then cut it into 10 pieces. Shape each piece into a disk, then gently make a hole in the center with your fingers. Place the bagels on a lightly greased, parchment-lined baking sheet.(5 minutes)
  5. Bake at 375°F (190°C) for 15 minutes.(15 minutes)
  6. While the bagels bake, melt the butter and set it aside. In a separate bowl, mix the remaining 2 tablespoons of brown sugar and 1 teaspoon of ground cinnamon.
  7. After 15 minutes, remove the bagels from the oven, brush with melted butter, sprinkle with the cinnamon-sugar mixture, and return to the oven. Bake for 5 more minutes until golden brown.(5 minutes)
  8. Remove from the oven and let cool before slicing. Enjoy!
