While this arugula salad can be served as a side dish, it is nutritious enough to be eaten on its own. - Place the onion slices in a bowl with cold water for a few minutes. Then drain and dry them with paper towel.(5 minutes)
- Place the arugula in a large salad bowl. Add the onions, feta cheese, sacha inchi seeds, and pomegranate seeds.(5 minutes)
- To make the dressing, add the olive oil, balsamic vinegar, honey, salt, and pepper in a jar. Shake to combine. Taste to adjust seasoning.(3 minutes)
