This quick and easy arugula salad has the perfect combination of flavors and textures: slightly spicy arugula is topped with soft figs, creamy goat cheese, and crunchy walnuts, all drizzled with a delicious sweet and tangy balsamic honey vinaigrette. This wholesome salad is wonderful on its own or as a flavorful side dish.
- To toast the walnuts, heat them in a dry skillet over medium heat for 1 or 2 minutes until they become fragrant. Set aside.(2 minutes)
- In a small jar, add the olive oil, honey, balsamic vinegar, and salt. Put the lid on and shake the jar until everything is combined.(1 minute)
- In a large bowl, add the arugula and drizzle the vinaigrette over it. Toss to combine.(2 minutes)
- Top the arugula with toasted walnuts, crumbled goat cheese, and figs. Enjoy right away!(2 minutes)
