Directions

This vibrant cucumber salad comes together in minutes, delivering bold flavor with every bite. Crisp cucumber slices are tossed in a tangy, sightly sweet dressing made with soy sauce, garlic, sesame, rice vinegar, and chili oil, creating a refreshing dish that's equal parts light and punchy. Perfect as a side or a stand-alone snack, it's a quick way to bring classic Asian-inspired flair to your table.

  1. Slice the cucumbers at an angle to your preferred thickness.(5 minutes)
  2. Place them in a bowl, sprinkle with ½ teaspoon of salt, and mix well. Let them chill in the fridge for at least 20 minutes to draw out excess water.(20 minutes)
  3. Then, drain and give the slices a quick rinse before returning them to the bowl.(1 minute)
  4. Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic.(2 minutes)
  5. Toss everything together until well combined, and serve. Enjoy!(1 minute)
