Beet Hummus

Ingredients

  • 1 beetroot (roasted and peeled)
  • 3 cloves of garlic (minced)
  • 15 ounces of chickpeas (1 can, drained)
  • 1/3 cup of olive oil
  • 2/3 cups of tahini paste
  • 1/3 cup of lemon juice
  • 1 teaspoon of ground cumin
  • 3/4 teaspoons of salt (or to taste)

Directions

Although beets are highly nutritious, many people are not particularly fond of them. This hummus recipe is a wonderful way to sneak in beets into your diet and enjoy their essential nutrients. Creamy, vibrantly color, and packed with nutrients, it is the perfect bread spread or wholesome dip.

  1. Place all of the ingredients in a food processor, except for the olive oil.(1 minute)
  2. Put the food processor on low and slowly add the olive oil. Process until the mixture is smooth.(3 minutes)
  3. Adjust seasoning to your preference. Transfer to a bowl, drizzle with olive oil, and garnish with sesame seeds and parsley. Enjoy!

Serve your beet hummus with homemade crackers, like these amaranth flour crackers or homemade seed crackers with maca, or fresh vegetables, like carrots or celery.
