If you happen to have a few minutes to spare in the morning, give these carmealized apple crepes a try! Besides filling your kitchen with delicious smells, they will help you start your day on a healthy foot. These crepes feature everyone's favorite duo - apples and cinnamon - as well as kaniwa, an ancient grain packed with protein and iron. Lightly sweetened with brown sugar, they are worth every bite!
- In a large bowl, whisk together the eggs, milk, salt, vanilla extract, ground cinnamon, and both flours. Let sit for half an hour to thicken.(30 minutes)
- Using a small brush, lightly oil a nonstick frying pan. Then pour about a quarter cup of the batter and swirl the pan so that it evenly covers the bottom.(2 minutes)
- As it is cooking, gently place two to three apple slices on the batter and sprinkle everything with about a quarter of a teaspoon of brown sugar. When the sides start to get lightly brown, gently flip the crepe using a large spatula. Cook for a minute or so until the apples caramelize a little bit. Then take it off the pan. Repeat with the rest of the batter.(5 minutes)
