  • 2 cups of chickpeas (canned & rinsed, or cooked)
  • 2 tablespoons of flax (+ 1 TSP for garnish)
  • 4 eggs
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 teaspoon of sesame seeds (for garnish)

Directions

These chickpea buns are a simple and protein-packed alternative to traditional white bread, perfect for sandwiches or as a healthy snack. Made with chickpeas, eggs, and flax seeds, the batter requires no kneading—just blend, pour, and bake. These buns come out soft and fluffy inside, with a lightly crusty, seedy top, making them both delicious and nutritious.

  1. Preheat your oven to 180°C (350°F) and lightly grease small ramekins.
  2. Place all the ingredients in a mixing bowl.(1 minute)
  3. Use an immersion blender to blend the mixture until smooth.(3 minutes)
  4. Pour the blended mixture into the greased ramekins. Sprinkle flax and sesame seeds on top.(2 minutes)
  5. Bake for 20 minutes at 180°C (350°F) or until baked through and lightly browned.(20 minutes)
  6. Remove from the oven, run a knife around the edges, and let them cool. Once cooled, remove from the ramekins and enjoy!
