Lucuma is not only a good source of fiber, vitamin B3 (niacin) and iron, but it also has a mild sweetness that helps reduce the need of sugar in many desserts, as well as a delicate flavor than goes perfectly with classic recipes like this Italian tiramisu.
- Put the can of full fat coconut milk in the refrigerator to chill.(30 minutes)
- Soak the cashews in hot water until they get soft.(2 hours)

- Take the cashews' cream out of the fridge and pour it into the whipped mixture. With the help of a spatula, combine all the ingredients until you obtain a soft cream. Reserve the bowl in the refrigerator.(5 minutes)
- Mix the brewed coffee with the rest of the honey in a small bowl. At this point you can add a tablespoon of coffee liquor for extra flavor. Embed one by one the lady fingers and lay them carefully at the bottom of a square pan. The lady fingers should not be soggy or they will break.(5 minutes)
- Take the filling from the fridge and pour part of it until covering about an inch (2.5 cm) of the lady fingers at the bottom of the pan.(1 minute)
- Following the same procedure, add another layer of lady fingers and cover with the filling.(6 minutes)
- Reserve for at least 45 minutes in the fridge. Before serving, sprinkle dark cacao powder on top of the preparation.(50 minutes)
