Ingredients

  • 1 onion (white, medium, chopped)
  • 2 tablespoons of thyme (dried)
  • Black pepper (to taste)
  • 1 tablespoon of olive oil
  • Salt (to taste)
  • 1/2 cup of wine (white, preferably Chardonnay)
  • 4 cups of mushrooms (cremini, sliced)
  • 1/2 cup of sour cream

Directions

This revamped dish proves that comfort food can also be healthy! Without the extra calories of the traditional stroganoff, this recipe has a great nutritional value. It calls for generous amounts of thyme, which is known for its agreeable, lemony flavor. Its anti-aging, antimicrobial, and antispasmodic properties are particularly useful for soothing asthma and other respiratory problems. This mushroom stroganoff also contains onions, which serve as a natural antibiotic and a good source of minerals and B-complex vitamins. Cremini mushrooms, on the other hand, have a meat-like texture, are low in calories, and provide vitamin B9 (folate), selenium, and glutatione, which are powerful antioxidants that contribute to reducing chronic diseases and inflammation as well as preventing cellular damage.

  1. In a hot pan, sauté the chopped onion with the olive oil until it looks translucent and gets a slightly brown color.(5 minutes)
  2. Add the thyme and sliced mushrooms. Sauté until the mushrooms lose a little bit of water.(5 minutes)
  3. Pour the wine and let simmer for few minutes until the alcohol evaporates.(3 minutes)
  4. Add the sour cream and gently mix until you get a creamy consistency. Season to taste with salt and pepper.(5 minutes)

You may pair this meatless stroganoff with mashed potatoes and green peas. Enjoy!
