Ingredients

  • 20 dates (deseeded)
  • 1/2 cup of walnuts (roasted)
  • 1/2 cup of almonds (roasted)
  • 1/4 cup of HerbaZest Puffed Quinoa (+ more for garnish)
  • 3/4 cups of oats
  • 3 tablespoons of HerbaZest Cacao Powder
  • 1 cup of dark chocolate chip (melted)
  • 2 tablespoons of espresso

Directions

These rich, chewy bites blend sweet dates, roasted nuts, and hints of coffee for a satisfying energy boost. Puffed quinoa adds a light crunch, while a dark chocolate coating takes them to the next level. Packed with fiber and healthy fats, they're a wholesome treat you'll want to keep on hand.

  1. Soak the dates in hot water for 10–15 minutes to soften.(15 minutes)
  2. In a blender or food processor, pulse oats, almonds, walnuts, and cocoa powder until coarse.(3 minutes)
  3. Add drained dates, espresso, puffed quinoa, and a pinch of salt. Blend into a sticky mixture.(3 minutes)
  4. Shape into balls or press into silicone molds. Refrigerate for 30 minutes to firm up.(30 minutes)
  5. Dip each bite in melted dark chocolate and place on a parchment-lined tray.(5 minutes)
