  • 1/2 cup of dates
  • 2 cups of water (boiling)
  • Salt (a pinch)
  • Chocolate chip (for drizzling; optional)

These sacha inchi date cookies are made with just a few simple, wholesome ingredients. Packed with the complete protein found in sacha inchi, they pair nutty richness with the natural sweetness of dates for a satisfying and delicious treat. Free from unnecessary additives, they're perfect for mindful snacking or sharing with loved ones.

  1. Place all the ingredients in a food processor. Process until a sticky dough forms.(3 minutes)
  2. Roll a tablespoon of dough into a ball, gently flatten it between your hands, and place it on a parchment-lined baking sheet. Repeat with the remaining dough.(10 minutes)
  3. Bake at 400°F (200°C) for 10-12 minutes or until baked through. Enjoy on their own or drizzle with melted chocolate.(10 minutes)
