Tofu, being soy-based, is rich in protein, iron, and calcium as well as phytoestrogens for hormonal balance. - Preheat the over to 350°F (176°C). Then place all of the ingredients in a blender, except for the amaranth flour, mushrooms, tomatoes, bell peppers, and chives. Process until well combined.(3 minutes)
- Transfer the mixture to a bowl and add the remaining ingredients. Mix well.(3 minutes)
- Spray the bottom of the muffin pan with a non-stick cooking spray or line it with muffin liners. Then add about 2 tablespoons of the batter to each muffin cup. Bake for 25-30 minutes.(30 minutes)
