Walnut & Mushroom Spaghetti Bolognese

Ingredients

  • 8 ounces of mushrooms (sliced)
  • 1/2 cup of walnuts (crushed)
  • 1 sweet potato (diced)
  • 1 onion (diced)
  • 1 clove of garlic (minced)
  • 1 stalk of celery (diced)
  • 2 tablespoons of soy sauce
  • 1 3/4 cups of tomato sauce
  • 2 tablespoons of tomato paste
  • 1/2 teaspoon of rosemary (dried)
  • 1/2 teaspoon of thyme (dried)
  • Black pepper (to taste)
  • Salt (to taste)
  • 1 teaspoon of paprika
  • 8 ounces of pasta (spaghetti; gluten-free if needed)

Directions

This meatless version of spaghetti bolognese will become your go-to pasta recipe! It comes together in about 30 minutes and will surprise you with a delicious combination of flavors and a lovely crunch. Being so rich in vegetables, this meal will also give you key nutrients, like healthy fats, complex carbs, and protein.

  1. Cook pasta according to package instructions.
  2. Meanwhile, sauté the onions and garlic until translucent. Add the celery and cook for two more minutes.(7 minutes)
  3. Add sliced mushrooms and cook them until the water has evaporated.(5 minutes)
  4. Add sweet potato and walnuts and cook for 10 minutes, stirring once in a while.(10 minutes)
  5. Then add the tomato sauce, tomato paste, soy sauce, dried rosemary, dried thyme, paprika, salt, and pepper. Cook for another 10 minutes.(10 minutes)
  6. Serve with fresh basil over pasta. Enjoy!
