Ingredients

  • 15 ounces of cannellini beans (or other white beans, 1 can)
  • 1 cup of wild rice (or a wild rice blend)
  • 2 carrots (small, diced)
  • 4 stalks of celery
  • 1 onion (small, diced)
  • 3 cloves of garlic (minced)
  • 3 sprigs of thyme (+ more for garnish)
  • 3 tablespoons of butter
  • 4 cups of vegetable broth (or more for a thinner soup)
  • 1/4 cup of all-purpose flour
  • 1 teaspoon of salt (or to taste)
  • 1/4 teaspoon of ground turmeric
  • Ground black pepper (to taste)
  • 1/2 cup of heavy cream

Directions

This thick and creamy wild rice and white bean soup combines tender vegetables, hearty wild rice, and white beans in a flavorful, comforting broth. Infused with thyme and finished with a touch of heavy cream, this dish offers a rich, wholesome, and warming meal perfect for cooler days.

  1. In a large pot, melt the butter and sauté the onions, celery, and carrots until softened.(8 minutes)
  2. Add the garlic and cook for one minute.(1 minute)
  3. Stir in the flour to coat the vegetables, and after a minute, pour in the vegetable broth, stirring to combine.(2 minutes)
  4. Add the beans, wild rice, thyme, salt, pepper, and turmeric. Bring to a boil, reduce the heat, cover, and cook until the rice is tender, stirring occasionally.(40 minutes)
  5. Once the rice is cooked, stir in the cream and let it simmer for an additional 7-10 minutes. Adjust the seasoning to taste and enjoy!(10 minutes)
